How To Make Granola

My Favorite Granola!
This is a pretty forgiving recipe. I'd use it more as a guideline until your granola is perfectly tinkered to the way you want it.

1) Preheat oven to 300 degrees. Oil 4 baking sheets.

2) in a large bowl, mix:

32 cups oats
2 tsp. salt
1 1/2 tsp. cinnamon
cloves/allspice/nutmeg, depending on what taste you'd like

...and as many other dry goods yummies you like. My favorites to choose between are:

-chopped almonds, walnuts, pecans, hazelnuts... 4-8 c
-raisins or dried cranberries, 4-8 c
-GROUND (not whole, you can do this in the "not for coffee" grinder) flax seed, 2-5 c
-coconut, 4-8 c
-popped amaranth seeds (heat oil to smoke point in small cast iron skillet, pop amaranth on medium heat. watch them go all over the place. healthy and bemusing but time consuming.)
-rice crispies (nice crunch), 4-6 c
-sesame seeds, 3-4 c
...the possibilities are yours to find.

3) In a smaller bowl or measuring cup, mix:

3 c veggie oil
2 1/4 c honey
2 1/4 c maple syrup
6-8 TABLESPOONS vanilla
generous 1 c molasses
4) Pour most of the wet ingredients over the dry ingredients, mixing well. If too dry, add the rest of the wet ingredients. A wetter granola will end up softer and stickier, while a drier granola will be crunchier.

5) Spread evenly over your four baking sheets and throw in the ovens. Bake 30 - 45 minutes, TURNING OFTEN. About every 10 minutes. Turning means taking the sheets out of the oven and mixing the stuff up with a spatula. If you don't do this it will burn. After a while, when you turn it over you will see that the stuff on the bottom is golden brown. You will know it is done because when all of the granola is this nice golden brown color.

6) Take out of the oven, cover the trays with paper towels, and press hard on your granola. This is the step that makes it clumpy. If you don't want clumpy granola, ignore this.

7) Let cool completely before removing towels, unearthing your granola with a spatula, and breaking up the sheets into chunks of your desired size.

8) Eat lots of granola and be happy.

Remember that washing your dishes (yes, even those gross sticky pans) is part of your job as the granola-maker. Don't leave them for the next day's pre-dinner clean!
