Tassajara Popovers

~The one and only legendary popover recipe, a staple many a Sunday morning and a most excellent hangover cure (take with coffee).~

  • 1 cup white flour
  • 1/2 tsp salt
  • 3 eggs
  • 1 cup milk
  • 2 tsp melted butter

Mix ingredients, grease muffin tins, heat in oven for 5-10 minutes. When hot, fill each cup one-third full with popover batter. Bake at 450 for 20 minutes, then 350 for another 10-20 minutes. Do not open the oven until 30 minutes of baking.

Makes 12.
